Thanks for joining my short demo at the MOCO farmers market and showing interest in my second Phyllo and Borek Class. Homemade borek (Savory Mediterranean Pie) has been one of my most requested savory items at the 2024-2025 MOCO farmers market.
📆 When: Sunday, September 7th | 2 - 4 pm
💵 Cost per person: ~$65 after tax
📍 Location: large kitchen area / open space in Columbia, IL (20 mins from STL/South County Mall/CWE). Address will be provided with the confirmation details.
🍳 Class Details
- You will receive my recipe
- You will gain hands-on experience making homemade phyllo and borek
- You do not need to bring anything. I have the right tools for you
- By the end of the class, you will know how to make the phyllo dough, stretch / roll it into phyllo (huge sheets made of the dough), then wrap it with your favorite filling (savory or sweet) and cook it. I learned the techniques in my high school years and have been making phyllo and borek for 45 yrs
- You will learn multiple prep and cooking techniques (stretch vs roll, bake vs cook on stovetop)
- Complimentary lunch - you will enjoy fresh hot homemade borek that you will make with my help while socializing with other locals
- Take Home - make a phyllo with Seni's help and take it home to make borek at home with your favorite filling
- Holiday Activity - this could be your favorite activity and meal during a holiday. After you attend my class, you can make homemade phyllo and borek during the holidays with your family, kids, grandkids and friends. Such a fun and memorable activity! Surprise your family with unique food this year over the holidays.

What is BOREK?
Borek is a family of pastries or pies found in the Balkans and Middle East made of a thin dough such as filo/phyllo dough with a variety of fillings, such as meat, cheese, spinach, potatoes, etc. The most popular filling in our country Bulgaria is Eggs and Feta and it is called Banitsa. We have also lived in Turkey where it is called BOREK. In other Balkan countries it is called burek, byrek, sirnica, etc.
In the Fall, we stuff our phyllo with pumpkin, honey and walnuts. So yum! At the farmers market, we offer spinach feta and leek feta borek. In October, we plan to bring again this year "Tikvenik" - the Bulgarian version of borek stuffed with pumpkin, apples, walnuts and aromatic spices. You can also make this at home.
